KERALA VEGETABLE STEW

Vegetable stew is a combination of vegetable creamy curry prepared with thick and thin coconut milk and dry spices
Vegetable stew include any combination of vegetables (such as carrots, potatoes, onions, beans, peppers, mushrooms, and tomatoes)
It is generally served with Appam, Idiyappam, Ghee Rice or even with Malabar poratta

INGREDIENTS
  1. Onions 1 small       
  2. Carrot 1 nos chopped into cubes 
  3. Potato 2 nos chopped into small cubes
  4. Peas/ or any vegetable of your choice
  5. Green Chili 1 nos 
  6. Cardamon pods 1 nos
  7. Peppercorns or powder 1 tsp
  8. Coconut milk thick & thin
  9. Coconut Oil 1 tsp
  10. Curry leaves
  11. Turmeric 1/4 tsp optional
METHOD
  1. First boil all the vegetables with, green chilly, cardamom, peppercorns, salt and turmeric for 2 to 3 whistles
  2. While its boiling extract thick and thin milk from coconut and keep aside
  3. Once the vegetables are cooked, first add in the thin or 2nd coconut milk and cook for 5 mins
  4. Now add in the 1st or the thick coconut milk cook for a min, once thick milk is added do not boil the gravy
  5. Finally drizzle some coconut oil and curry leaves and turn of the stove
Serve it Appam , Idiyappam, Ghee rice
