APPAM - HOW TO MAKE PERFECT KERALA APPAM WITH VIDEO

Appam is a type of pancake which is made of fermented rice batter and coconut milk
Ideal method is using Toddy to ferment the batter but to get it is difficult so most of us use yeast to ferment. They are made in appachatti and It is served with coconut milk , stew or spicy gravies

In this recipe i have used a special tip to make toddy at home using coconut water and yeast, this is my mother recipe she makes it this way and it has always turned out well. I stopped using only yeast to make appam batter after following this method


INGREDIANTS
  1. Dosa rice 1 cup
  2. Grated coconut 1/2 cup  
  3. Cooked rice 1/2 cup
  4. Yeast 1 tsp
  5. Coconut water 1 cup
  6. Sugar 1 tbsp
  7. Salt 1 tsp
METHOD
  • Firstly, soak dosa rice overnight or 4 to 5 hrs
  • Add yeast and sugar to the coconut water mix well and keep aside for 6 to 8 hrs ( this will give a natural toddy effect )  ref the video
                                     
FOR GRINDING
  • Grind dosa rice, coconut, cooked rice and yeast water into a smooth batter i did not add any extra water as my yeast and coconut water was sufficient , in case you do not have coconut water activate yeast in Luke warm water and use that before grinding
  • Grind it in to a smooth batter and keep aside to ferment for 8 hrs or overnight
TO MAKE APPAM
  • Heat an appam pan/ appachatti
  • Spread a ladle full of batter into the pan, turn and tilt the pan into circles so as to spread the batter
  • Cover and cook till it becomes slightly golden color
  • Remove and serve the appam hot 
Best served with Stew / Veg or Non veg Stew
