Its high in fiber , it improves blood flow and helps in reduces high blood pressure
This beetroot curry is very delicious and can be made easily. It requires minimal pantry ingredients
I first tasted this in srilanka, till then i never had beetroot as curry we always made beetroot in salads or dry fry.
Ingredients
- Beetroot 250 grams washed & pealed
- Onions 1 small
- Green chilies 2 nos
- Garlic 2 to 3 pods
- Turmeric powder 1/4 tsp
- Chili powder 1/2 tsp
- Cumin powder 1/2 tsp
- Coriander powder 1/2 tsp
- Pepper 1/2 tsp
- Coconut milk 1 cup thin & thick
- Cinnamon stick 1
- Salt
- Oil
- Curry leaves
- Water 1/2 cup
Method
- Firstly wash , peal and cut the beetroot into juveniles
- Heat a pan, add oil , once it’s hot add onions , green chili and garlic and saute for 2 mins
- Once onions are soft add the beetroot, chili powder, turmeric powder ,cumin powder, coriander powder, pepper, cinnamon stick and mix well
- Now add thin coconut milk and water cover cook till Beetroots are soft
- Do not over cook the Beetroots it’s should be slightly crunchy
- Finally add the thick coconut milk and curry leaves cook for a min and Turn of the stove.
Serve it with Rice.
