BEETROOT CURRY

Beetroot curry is a simple easy and very comfort food. Beetroot has lot of health benefits 
Its high in fiber , it improves blood flow and helps in reduces high blood pressure
This beetroot curry is very delicious and can be made easily. It requires minimal pantry ingredients
I first tasted this in srilanka, till then i never had beetroot as curry we always made beetroot in salads or dry fry.

Ingredients 
  • Beetroot 250 grams washed & pealed 
  • Onions 1 small
  • Green chilies 2 nos
  • Garlic 2 to 3 pods
  • Turmeric powder 1/4 tsp
  • Chili powder 1/2 tsp
  • Cumin powder 1/2 tsp
  • Coriander powder 1/2 tsp
  • Pepper 1/2 tsp
  • Coconut milk 1 cup thin & thick 
  • Cinnamon stick 1 
  • Salt
  • Oil
  • Curry leaves
  • Water 1/2 cup

Method
  • Firstly wash , peal and cut the beetroot into juveniles 
  • Heat a pan, add oil , once it’s hot add onions , green chili and garlic and saute for 2 mins
  • Once onions are soft add the beetroot, chili powder, turmeric powder ,cumin powder,  coriander powder, pepper, cinnamon stick and mix well
  • Now add thin coconut milk and water cover cook till Beetroots are soft
  • Do not over cook the Beetroots it’s should be slightly crunchy 
  • Finally add the thick coconut milk and curry leaves cook for a min and Turn of the stove.
Serve it with Rice.
