SRI LANKAN EGG ROTI

Sri lankan Egg Roti is a street food and very famous among village and urban folks
Its hard to find anyone who has not tasted it.

INGREDIENTS 
  1. All purpose flour 2 cups 
  2. Salt
  3. Water
  4. Oil 
  5. Eggs 2 TO 4 nos
  6. Pepper
  7. Ghee

METHOD
  1. Make a soft dough using flour salt and water
  2. Dough should be soft and smooth 
  3. Once the dough is ready take a bowl add I cup or little less oil and soak this dough in this and keep outside for 8 hrs or overnight  ( u can reduce the oil if u wish so )
  4. Do not refrigerate them.
  5. Now make it into two or three balls and take one and spread it over flat surface or tawa to make a thin paper sheet or translucent, if there are holes also that’s fine 
  6. Heat a tawa add ghee then transfer it to  the tawa 
  7. Now break open eggs into a bowl and whisk well
  8. Pour this mixture on top of the roti and season it with pepper and salt.
  9.  Fold it from the sides  covering the egg and forming a square shape 
  10.  Allow  it to cook well on both the sides add ghee or oil to the sides as required 
  11. Press and cook well on both sides on medium to low flame . You may have to flip it few times 
                                      
Serve it warm
