CHILLI CHICKEN

Chili Chicken is an Indo Chinese dish . In India there are different variations for this dish with different seasoning and spice . The south Asian contributions are in the spices used and Chinese cooking technique used in preparations.

INGREDIENTS
  1. Boneless chicken 300 grams      
  2. Onions cut into cubes 1 cup
  3. Capsicum cut into cube 1 cup ( different colors can be used )
  4. Ginger & Garlic chopped 2 Tbsp 
  5. Green chilly 2 nos slit in the middle
  6. Spring onions handful
  7. Soya sauce 2 tsp
  8. Red chilli sauce 1 tsp
  9. Tomato sauce 1 tsp
  10. Corn flour 1 Tbsp
  11. Vinegar 1 tsp
  12. Salt
  13. oil ( sunflower oil /sesame oil )    
FOR MARINATION
 Marinate chicken with 1 tbsp Kashmiri chili powder, ginger garlic paste, 1 egg , corn flour 1 tbsp ,1 tbsp rice flour salt and keep aside for min 30 mins 

METHOD
  1. First deep fry chicken till its golden color and keep aside
  2. Heat a wok on high flame 
  3. Add oil
  4. Once its hot, add chopped ginger garlic and saute for a min 
  5. Make sure it doesn't burn
  6. To that add green chilies and saute
  7. Now start adding onions and capsicum one by one and cook on high flame till its done
  8. Once vegetables are cooked start adding the sauces and vinegar one by one and saute well for 2 mins
  9. To this add the fried chicken and mix well
  10. Finally add in the cornflour slurry ( mix corn flour to 1/4 cup water to make slurry without any lumps)  to the mix and cook for another 2 mins
  11.  Sprinkle generous amount of spring onions and turn off the stove 
  12. Serve it hot  with Fried rice or Roti
