INGREDIENTS
- Bhindi 250 grams
- Onions 2 chopped
- Tomato 2 ( pureed)
- Ginger 1 inch
- Garlic 4 to 5 pods
- Green chilies 2 nos
- Turmeric powder 1/4 tsp
- Kashmiri chilly powder 1 tsp
- Coriander powder 1 tsp
- Cumin powder 1/2 tsp
- Garam masala 1/2 tsp
- Raw spices ( cinnamon, bay leaf , cardamom)
- Curd 1/4 cup ( beaten )
- Oil
- Salt as required
- Fresh cream optional
- Coriander leaves handful
METHOD
- First add oil in a pan and fry bhindi on low flame, ( add pinch of salt to it ) till its slightly crisp Once it’s fried keep it aside.
- Now in the same pan add little more oil and add raw garam masalas ( cinnamon, cardamon, bay leaf) and saute
- Once it starts releasing aroma add chopped onions, ginger , garlic and green chilies and saute till onion turns light brown
- Now add tomato puree to this and cook well , till it starts releasing oil from the sides
- Add in turmeric powder, chilly powder, coriander powder, cumin powder and garam masala and mix well
- Check for seasoning
- To this add the beaten curd and mix well and cook for two mins
- Add in fried bhindi and 1/2 cup water and cook till the gravy thickens .
- Finally u can add one tbsp fresh cream ( optional)
- Then turn off the stove and serve it hot
