Mutton Biriyani


Ingredients
Rice preparations:

  • Biriyani rice/jeera rice
  • Patta-2nos
  • Ellaka-2nos
  • Grambu-2nos
  • Cloves-2nos
  • Lime juice- 2tbsp
For Gravy:
  • Onion-3 nos
  • Tomato-3nos
  • Ginger-1 large
  • Garlic-5 to 6 pods
  • Coriander leaf
  • Mint leaf
  • Curry leafs
  • Pepper powder -2 tbsp
  • Chilly powder-2 tbsp
  • Turmeric powder-1tbsp
  • Coriander powder - 1 tbsp
  • Garam masala- 1 tsp
  • Fennel seeds-1tsp
  • Oil as required
For marination:
  • Mutton cut into small piece
  • Grind 1 onion+1 tomato and keep aside
  • Sauté  1 tbsp coriander powder, 1 tbsp pepper powder, 1 tbsp garam masala
Method:

  • Marinate the mutton pieces with chilly powder, turmeric powder, the onion & tomato paste, sautéd powders and salt
  • Keep aside in the fridge for 20 mins.
  • Heat oil in a pan
  • Add the rest tomatos and sauté for 5 mins
  • To that add mutton and onion and sauté for 3 to 4 mins
  • Grind ginger ,garlic, fennel seeds,coriander leafs, mints leafs and curry leafs
  • Add this mixture to the mutton
  • Close the pressure cooker and let it cook for 20 to 25 mins.
  • Keep the gravy aside
  • Now lets cook the rice
  • Heat the  cooker with 2 tbsp ghee ( ghee can be added accordingly)
  • Add patta, grambu,ellaka,clove and sauté it for 2 mins
  • Then add rice , fry in that for 2 mins
  • Add lime juice
  • Add water and close the lid. ( For 1 glass water add one and half glass water if you are cooking in pressure cooker )
  • Put the whistle and cook the rice for 5 mins under low flame.
  • Once rice is ready we can Dum it.
For Dum:


  • In a large bottom vessel add ghee
  • To that first add little gravy , on top of that rice likewise layer it completely.
  • Garnish with corainder leafs .
  • Close the lid and keep under lower flame for 8 mins. 
  • Biriyani is ready
  • Serve hot with Raita and pickle.
