QUILON CHICKEN FRY | CHEF PILLAI RECIPE

Quilon Fried Chicken..! Kerala spiced fried chicken with crispy batter scraps on top..! A restaurant style easy fried chicken recipe.. this is CHEF SURESH PILLAI  Recipe.

Quilon Chicken Fry

INGREDIENTS :

FIRST MARINATE:
  1. Chicken cut in to medium pieces- 500 g
  2. Turmeric powder- 1/2 tsp
  3. Kashmiri chilly powder -1 tbsp
  4. Coriander powder-2 tbsp
  5. Salt- to taste
  6. Garlic hand crushed with skin - 3cloves
Marinate the chicken ( with first marinade) for 10-20 minutes
In a pot add water and cover and cook the chicken until 60-70% is done.
Cool down the chicken for 10 mins in the same broth and keep aside.

SECOND MARINATION
  1. Ginger, garlic and green chilies paste- 30gm (add green chilies according to your spice level)
  2. Egg- 1
  3. Corn flour- 3 Tbsp
  4. Maida - 3 Tbsp
  5. Kashmiri chilly powder- 2 tbsp
  6. Coriander powder- 3 tsp
  7. Turmeric powder - 1 tsp
  8. Black pepper powder - 2 tsp
  9. Garam Masala powder- 1 tsp 
  10. Chopped curry leaves - few
  11. Salt to taste
  12. Lime juice - 1 lime
In a bowl mix all the ingredients with water and make very smooth (loose) batter and add the cooked chicken and keep aside for 10 minutes.

FOR FRYING
  1. Coconut oil/ sunflower oil - enough for the frying
  2. Curry leaves- few
  3. Green chilies slitted - 3
  4. Garlic cloves sightly crushed - 6
  • Heat a large Kadai or frying pan add oil and bring to high temperature for frying 
  • Add the marinated chicken in batches depends on the size of the pan, fry them until crispy 
  • Now add few curry leaves, green chilies and garlic just before the chicken is done and remove from oil and drain it
  • Pour the remaining loose batter on oil in batches and fry them as crisp 
  • garnish the chicken.
 * Temperature is the key for frying chicken,  it should not drop while frying, fry in batches and undisturbed for first 2-3 minutes.
* Batter need to be loose, NOT to coat the chicken like pakoda
