INGREDIENTS
- Pavakka / bitter gourd – 2 medium, thinly sliced
- Green chilies 2 to 3
- Grated coconut 1/2 cup
- Mustard seeds 1 tsp
- Cumin seeds 1 tsp
- Yogurt 1/4 cup
- Salt –To taste
FOR FRYING BITTER GOURD
- Oil 1 tbsp
- Chili powder 1/2 tsp
- Turmeric powder 1/4 tsp
FOR TEMPERING
- Mustard seeds 1/2 tsp
- Dried red chilly 1
- Curry leaves little
METHOD
- Shallow Fry the Bitter Gourd by adding salt, 1/4 tsp turmeric powder,1/2 tsp chili powder stirring occasionally until browned, about 10 – 15 minutes over medium-high heat.
- While the bitter gourd is getting fried we can Grind the coconut along cumin seeds , green chilies yogurt and mustard seeds in to a fine paste & Set aside.
- Transfer the fried bitter gourd into a bowl & add the ground paste and mix well. check for salt.
- Heat coconut oil in a small pan. Splutter mustard seeds and fry dry red chilly and curry leaves. Pour over the bitter gourd mixture.
- Mix well. Serve with rice.
