PAVAKKA/BITTER GOURD PACHADI / ONAM SADHYA SPECIAL

Pavakka Pachadi is a very easy comforting side dish from Kerala cuisine. It's made with bitter gourd, coconut and curd. 

INGREDIENTS
  • Pavakka / bitter gourd – 2 medium, thinly sliced         
  • Green chilies 2 to 3 
  • Grated coconut 1/2 cup
  • Mustard seeds 1 tsp
  • Cumin seeds   1 tsp
  • Yogurt 1/4 cup 
  • Salt –To taste
FOR FRYING BITTER GOURD
  • Oil  1 tbsp
  • Chili powder 1/2 tsp
  • Turmeric powder 1/4 tsp 
FOR TEMPERING
  • Mustard seeds 1/2 tsp
  • Dried red chilly 1
  • Curry leaves little
METHOD
  • Shallow Fry the Bitter Gourd  by adding salt, 1/4 tsp turmeric powder,1/2 tsp chili powder  stirring occasionally until browned, about 10 – 15 minutes over medium-high heat. 
  • While the bitter gourd is getting fried we can Grind the coconut along cumin seeds , green chilies yogurt  and mustard seeds in to a fine paste & Set aside.
  • Transfer the fried bitter gourd into a bowl & add  the ground paste and mix well. check for salt.
  •  Heat coconut oil in a small pan. Splutter mustard seeds and fry dry red chilly and curry leaves. Pour over the bitter gourd mixture. 
  •  Mix well. Serve with rice.
