INGREDIENTS
- Prawns 300 g
- Onions 2 medium sliced
- Ginger & Garlic crushed 2 tsp
- Green chili 3 to 4 nos ( crushed ) acc to the spice level
- Garam masala 1 tsp
- Beaten curd 1/4 cup
- Mint & Coriander leaves handful
- Ghee 1 tbsp
- Oil 1 tbsp
- Cardamon,2 nos
- Cinnamon stick 1
- Cashew nuts 4 nos
- Bay leaf 1 nos
- Cumin seeds 1 tsp
- Fennel seeds 1 tsp
- Carrots chopped 1/2 cup
- Salt as required
- Water 2 cups
- Rice 1 cup ( basmati rice or jeera rice )
METHOD
- Wash, clean and marinate prawns with red chili powder, turmeric and salt
- Heat a pan add ghee and oil
- To that add cinnamon, cardamom,bay leaf ,cashew nut and saute for a min
- Then add cumin seeds and fennel seeds and saute till it releases aroma
- Add in ginger garlic and green chili crushed and cook till raw smell goes
- Then add onions and fry till it turn soft and slightly brown
- Once onions are cooked add the prawns and mix well
- Add garam masala and fry for 2 mins
- Check for salt and add accordingly.
- Now add in beaten curd and cook the masala for 5 to 8 mins
- You can add in carrots and mix well once the masala is slightly cooked
- Add in mint and coriander leaves and mix
- Finally add in rice and sufficient water ( see notes )
- Cover and cook till it is done
- Serve it Raita
NOTES:
1 cup rice = 2 cups water for open method
1 cup rice = 1.5 cup water for pressure cooker.
