PRAWNS PULAO

Prawns pulao is made by cooking rice along with prawns, onions, ginger, garlic, and everyday spices, this Prawn Pulao or Shrimp Pulao is a simple and flavorful recipe.

INGREDIENTS
  1. Prawns 300 g
  2. Onions 2 medium sliced
  3. Ginger & Garlic crushed 2 tsp  
  4. Green chili 3 to 4 nos ( crushed ) acc to the spice level
  5. Garam masala 1 tsp
  6. Beaten curd 1/4 cup
  7. Mint & Coriander leaves handful
  8. Ghee 1 tbsp
  9. Oil 1 tbsp
  10. Cardamon,2 nos
  11. Cinnamon stick 1
  12. Cashew nuts 4 nos 
  13. Bay leaf 1 nos
  14. Cumin seeds 1 tsp
  15. Fennel seeds 1 tsp
  16. Carrots chopped 1/2 cup
  17. Salt as required
  18. Water 2 cups
  19. Rice 1 cup ( basmati rice or jeera rice )
METHOD
  1. Wash, clean and marinate prawns with red chili powder, turmeric and salt 
  2. Heat a pan add ghee and oil
  3. To that add cinnamon, cardamom,bay leaf ,cashew nut and saute for a min
  4. Then add cumin seeds and fennel seeds and saute till it releases aroma
  5. Add in ginger garlic and green chili crushed and cook till raw smell goes
  6. Then add onions and fry till it turn soft and slightly brown
  7. Once onions are cooked add the prawns and mix well
  8. Add garam masala and fry for 2 mins
  9. Check for salt and add accordingly.
  10. Now add in beaten curd and cook the masala for 5 to 8 mins
  11. You can add in carrots and mix well once the masala is slightly cooked
  12. Add in mint and coriander leaves and mix 
  13. Finally add in rice and sufficient water ( see notes )
  14. Cover and cook till it is done
  15. Serve it Raita
NOTES:
1 cup rice = 2 cups water for open method
1 cup rice = 1.5 cup water for pressure cooker.
