Here is my secret recipe to making a vegetable rice.
Ingredients:
- Jeera rice/biriyani rice/sona masoori (1 Glass )
- Onion ( 1 finely chopped )
- Tomato ( 1 finely chopped )
- Carrot (1 grated )
- Beans ( finely cut)
- Ghee (1 tsp)
- Garam masala ( or raw cardamom,cinnamon,cloves ) - A pinch
- Biriyani masala (1 tbsp)
- Pepper ( optional )
- Salt as required
Preparation time : 5 min
Cooking time :10 min
Method:
- First, wash and drain the rice.
- Cut all the vegetables
- In a pressure cooker put one tsp ghee and add cardamom, cinnamon & clove. Stir for two minutes.
- Add onion,tomato and sauté it till the raw smell goes
- Then to that add carrot and beans sauté for a minute
- To this add salt, pepper, biriyani masala and the rice. Mix well
- Add water ( measurement for cooker: 1 glass rice add 1and 1/2 cup water) to this.
- Close the cooker lid raise the flame
- Once the vapor comes, put the weight, lower the flame and keep exactly for 5 min.
- After 5 min, turn off the burner and keep it aside till the vapour goes
- Vegetable rice is ready
- Severe hot with pickle or raita.
This vegetable rice can be on top of your menu card, when you have an unexpected guest. Serve it HOT with a veg or non-veg gravy. I carry it mostly to my clinic and my colleagues have loved it as well.
