A crunchy and chewy cookie or biscuit made with flour and desiccated coconut. This recipe coconut based cookie is simple and easy to make as it is made with basic ingredients available in every kitchen.
It can be ideal sweet and savory evening snack and can be relished with cup of tea or filter coffee.
INGREDIENTS:
- All purpose flour : 3/4 cup
- Desiccated coconut : 1/2 cup
- Powdered sugar : 1/2 cup
- Baking Powder : 1/4 tsp
- Salt a pinch
- Butter : 5 Tbsp / 1/3 cup
METHOD
- In a Bowl mix 3/4 cup all purpose flour , desiccated coconut , baking powder and salt
- Combine well and keep aside
- Now take another Bowl ,add butter and beat till it turns light and creamy u can use your whisk or electric beater ( with your hand its time a bit extra time )
- Once its creamy add in the dry ingredients and mix well
- Now knead it into a soft dough kind
- Pinch a ball sized dough and flatten slightly.
- Place the cookie dough over the plate giving good space in between.
- Preheat and bake at 180 degree Celsius for 12 minutes or till it turns slightly brown ( do not over bake them )
- Remove from the oven and cool the cookies completely and store in an airtight container.
