Tomato Moru Curry is so cooling and refreshing and makes a great yet simple and easy to make side dish or curry with rice for lunch or dinner.
INGREDIENTS
Tomato 2 nos ( small or 1 large ) chopped finely
Turmeric powder 1/2 tsp
Kashmiri chili powder 1 tsp
Salt to taste
For Grinding:
Coconut- ½ cup
Green Chili-1
Curd 1/2 cup
For Tempering / Seasoning:
Coconut oil : 1 tbsp
Mustard seeds 1 tsp
Fenugreek seeds 1 tsp
Dry Red Chili
Curry leaves 1 spring
METHOD
- Wash the tomatoes and chop into medium sized pieces, keep aside.
- Heat oil in a pan and splutter the mustard seeds.
- When the mustard seeds splutter, add the red chilies and curry leaves, fry for a few seconds.
- Meanwhile grind the coconut , green chili cumin seeds and curd in a blender until smooth. Keep this aside.
- Add the chopped tomatoes , turmeric powder & cook in low heat for about 3 to 4 minutes or until the tomatoes are cooked and little soft.
- As the tomatoes are cooked ,add salt and grind coconut blend and mix well.
- Let it cook for another few minutes until the mixture starts to boil and oil starts separating from the sides
- Turn off the stove and serve it with Rice for Lunch or Dinner
