TOMATO RICE

EASY LUNCH BOX RECIPE
 
INGREDIENTS
  • Tomato 2 small
  • Onion 1 small chopped
  • Ginger small piece
  • Garlic 3 pods
  • Dry red chilies 2 nos
  • Cashew nuts 3 to 4 nos ( optional )
  • Jeera rice 1 cup
  • water 1.5 cup
  • Ghee 1 tbsp
  • Raw garam masala    

TO GRIND
Grind tomatoes + ginger + garlic + dry red chilies + cashew nuts into a smooth paste and keep aside

METHOD
  • Heat the cooker or pan add ghee
  • To that add raw garam masala and saute till it releases aroma
  • Now add in the chopped onions and saute till its soft
  • To that add the tomato paste and cook till raw smell goes
  • Add the soaked and washed rice to the mixture and mix well
  • Add sufficient quantity of water and cook ( see notes )
  • Tomato rice is ready, garnish with coriander leaves and serve hot with raita 
NOTES:

RICE :WATER RATIO
FOR PRESSURE COOKER : 1 CUP = 1.5 CUP WATER
FOR OPEN VESSEL COOKING: 1 CUP = 2 CUPS WATER
